Ultimate Breakfast burrito

Having a good breakfast burrito is something you need in your arsenal. The best part is that this can be made with really anything, as long as you have the basics. This is just my version of the burrito, if you want to add some other flavors to spice this is up, I encourage it.

Before you make them a couple things to note.

  • ALWAYS! Crisp up your burrito at the end, it keeps it together and enhances the flavor/texture.

  • Prep everything before you get started, it makes it much easier on assembly. Since the only hot things going in the burrito are eggs and beans, you want you toppings on hand.

  • Set aside a wrapping station and don’t be afraid to get your hands messy, sometimes wrapping burritos isn’t pretty, but you need it to be tight!

Ingredients:

  • 3 flour tortilla’s

  • 2 tablespoons oil

  • 6 eggs

  • 1 avocado

  • 1/4 sliced red onion

  • Shredded cheese (it is not my place to decide your cheese quantity)

  • 1 can of black beans

  • 1 sliced tomato

  • 1/2 tablespoon cumin

  • 1/2 tablespoon garlic powder

Instructions:

  • Slice up your tomato, onion, and avocado. I would slice them all thin personally, it makes with easier to bite when eating a burrito.

  • Now its time for the stove top, heat up a pan and start cooking your beans, add your cumin, garlic powder, and let it cook down.

  • Once its cooked for a while, use your spatula and mash it a bit.

  • Now you will need a second pan here, (but it down get dirty), just heat it up to about medium and drop a tortilla in to toast it up.

  • Once heated move your tortilla to a rolling station, and add your fixings.

  • Now the eggs, eggs take a minute to cook so you can use the same pan as the beans, just scramble your eggs up with some oil and move it to your tortilla.

  • Roll up your burrito and then move it over to your pan with a little bit of oil, place it down with the end of the wrap facing the pan. You want the heat to seal the wrap.
